Aromatics of muddled raspberry, plum skin, vanilla bean and spice. A wave of blackberry, black currants and black tea adds complexity. Swirling brings up a sweetness to the fruits while adding a dried strawberry note and a vibrant energy. The palate is bright and beautifully structured with remarkable acidity balancing the ripe black fruits. Mouthwatering, pulsating Cabernet at its best.

Vinification

Ripe and fleshy, with more primary fruit intensity and sweeter tannins, this version of Cabernet is more “new world” than the previous versions while also maintaining great freshness and balance. This wine was fermented in 51% concrete and 49% stainless steel tanks. Aged in 67% new French oak. Bottled after 21 months.

As with many things, more time means more opportunities to make good decisions. Tenor Cabernet almost exclusively fermented in conical concrete tanks. Fermentation in concrete enhances the texture by controlling the temperatures throughout the process. The cooler temperatures mean that the fermentation process lasts longer (25-40 days), but is gentler, allowing us to maximize extraction and concentration. We use an exclusively native malolactic fermentation process, which relies on natural, traditional processes to initiate fermentation.

Vintage Notes

The 2015 Tenor Cabernet Sauvignon was crafted from two vineyards across two separate AVAs in Washington State: Columbia Valley and Red Mountain. Farmed using sustainable practices, the vines were then hand-harvested over several early mornings throughout October. Upon arriving in the winery, each cluster was hand-sorted, berry-sorted, and then fermented in concrete (51%) and stainless steel (49%) tanks. Using only the free-run wine, it was then moved to new custom French oak barrels (67% new) for 21 months of cellaring. After nearly 50 individual evaluations by our winemaking team, only 127 case were produced.
