2021Cabernet Sauvignon

The 2021 Tenor Cabernet Sauvignon is a harmonious blend of select vineyard parcels within the greater Columbia Valley. Key vineyard selections from Quintessence and Canyons vineyards in the Red Mountain AVA, Wallula Gap in the Horse Heaven Hills AVA, and Stoneridge from the Royal Slope AVA come together to create a symphony of flavors. This wine truly represents the diverse terroir of Washington State.

Late June brought high temperatures, resulting in early fruit development, although flavor lagged behind sugar advancement. Growers adapted by providing more canopy cover to shield delicate grapes, and drip irrigation sustained the vines, revealing their resilience under intense stress.

As fall arrived, the winemaking team delayed harvest to allow the fruit flavors to fully develop during the long, cool autumn. Hand-harvested in the crisp morning air of October, the fruit arrived at the winery in pristine condition. The promise of the vintage lay in those small, concentrated, and tenacious clusters.

In the winery, each lot was meticulously sorted. Cold-soaked and inoculated, the grapes danced with yeast, resulting in dynamic flavors. Carefully managed fermentation extracted polished tannins. The wine spent over 30 days in extended maceration before being barreled down into various formats of 100% new French oak barrels. Malolactic fermentation softened its edges. After cellaring for 21 months, only 8 premium barrels were selected to produce this 100% Cabernet Sauvignon wine. It was bottled unfined and unfiltered, ensuring a pure, vibrant, and intense experience, with a total production of only 186 cases.

Tasting Notes

The totally dark and saturated 2021 Tenor Cabernet Sauvignon is inky and purple in the glass. Intense aromas of grape jelly, quill ink, and black currants are supported by fragrant damson flower and bay leaf. On the palate it is equally complex with blackberry juice, iron, cocoa dusted cherries, sandalwood, and grenadine flavors. The upfront, chewy tannins quickly mellow giving way to loads of rich, full-bodied pleasure. The lengthy, decadent finish entices with German chocolate cake, black plum skin, and coffee bean.
